8 Vegan Pasta Recipes (College Students)

Pasta at aldi is literally 5 cents an ounce. All of these recipes use 3 oz of pasta. Folks that’s 15 cents! Yes I breakout the big guns and add fancy ingredients like fresh avocado or almond cream cheese but for a 15 cent bowl of pasta you can afford to make the sauce classy.

I used cheap traditional pasta but feel free to use gluten free pasta. This is a post of pasta sauces to bring variety into your kitchen. AND! these sauces take maybe 2 minutes to make. These are like 15 minute meals.

Each recipe just uses 3 oz of pasta so these dishes are essentially dinner for one. 3 oz of pasta isn’t normally a lot of pasta but these sauces are pretty hardy. Feel free to double up on the pasta πŸ™‚

I used canned coconut milk to add creaminess to the dishes. Canned coconut cream would be even better! You could do cashews blended with water if you’d like.

Vegan Cajun Pasta
I buy spices in bulk from the fancy food store here in Dallas. A couple large spoonfuls of spices costs about 25 cents! Cajun seasoning is pure flavor.

1/2 cup canned coconut milk, 1 TB corn starch + 2 TB water, 1 ts cajun spice blend, hot sauce optional + 3 oz pasta

  1. Dissolve corn starch into water
  2. Mix corn starch slurry in a pot with canned coconut milk and spices
  3. Simmer til sauce thickens. If too thick add more water or coconut milk. If too thin add more corn starched dissolved in water
  4. Mix in cooked pasta. Add hot sauce if you’d like. ENJOY

Vegan Chili Pasta – Protein
I love making crumbles from seitan sausage (chipotle feild roast is my fav). Feel free to use any crumbles you like. If you use frozen vegan crumbles follow the cooking directions. If you use vegan sausage just pulse in food processor until broken into crumbles.

handful vegan crumbles (I used one vegan field roast sausage), small can tomato sauce, 1 ts chili spice blend + 3 oz pasta // grated brazil nut for topping

  1. Prepare crumbles according to package. If using veggie sausage just pulse in food processor and you’re ready for the next step.
  2. Add crumbles, tomato sauce and spices to a pot and simmer
  3. Add cooked pasta. Top with a finely grated nut. ENJOY

Vegan Spinach Dip Pasta
I’m so into cream cheese that I had to give this a try! To get the smoothest sauce it’s best the blend the sauce then simmer it. I didn’t blend it so the texture looked a little grainy but it didn’t taste grainy at all. Feel free to just break it up in the pot with a spoon and whisk it smooth.

1/2 cup almond milk, 1/2 container vegan cream cheese (I used kite hill), sprinkle of onion & garlic powder, salt, handful spinach + 3oz pasta

  1. Simmer almond milk and cream cheese together with spices. Whisk smooth or blend everything before simmering.
  2. Turn off heat and add a handful of spinach. Mix in cooked pasta. ENJOY

Vegan Cilantro Lime Pasta
I freaking love the freshness of this recipe. Feel free to toss roasted corn into this. If sauce is too thick feel free to whisk with a tiny amount of water. I used a whole avocado but I bet half a large avocado would have been fine.

avocado, 1/2 lime juice, handful cilantro, onion & garlic powder, salt + 3 oz pasta

  1. Blend avocado, lime juice, spices and cilantro in a food processor til smooth. Add a little water if you want a thinner sauce.
  2. Mix with cooked pasta. ENJOY

Vegan Basil Cream Pasta
I used coconut milk here. Coconut cream would have been great or even vegan cream cheese. Fresh basil is so good!

1/2 cup canned coconut milk, 1 ts corn starch + 1 TB water, salt, pepper, small squeeze lime juice, 4 basil leaves

  1. Dissolve corn starch into water and mix the slurry with coconut milk
  2. Add in salt and pepper and simmer in a pot til thick
  3. If too thin add more corn starch slurry, if too thick add more coconut milk or water
  4. Remove from heat. Add chopped basil and lime juice. Mix with cooked pasta. ENJOY

Vegan Roasted Tomato Pasta
Another fresh pasta dish here! I only used half a large avocado but feel free to use a full. I used basil because that’s what I had but any fresh herbs would be great!

1/2 large avocado, 4 basil leaves, 1/2 lime juice, 1/2 TB water, salt, 1/2 cup canned roasted tomato (drained) + 3 oz pasta

  1. In a food processor blend smooth the avocado, basil, lime juice and water
  2. Mix roasted tomatoes in by hand
  3. Mix with cooked pasta. ENJOY

Vegan Creamy Chipotle Pasta
By far my favorite of all the pasta dishes but I’m a huge sucker for anything cream cheese and anything chipotle πŸ™‚

small can tomato sauce, 1/2 container vegan cream cheese (I used kite hill), dash of chipotle powder (or sauce if that’s all you have), hot sauce + 3 oz pasta

  1. Blend tomato sauce and cream cheese smooth in a blender
  2. Simmer with a dash of hot sauce and chipotle powder
  3. Mix with cooked pasta. ENJOY

Vegan Tandoori Pasta
How often do I used tandoori spice blend? Never! I freaking love our fancy grocery store for having every spice blend possible. You can totally make the spice blend yourself with a simple google search. When I think tandoori I picture spices and yogurt. Instead of yogurt I opted for good ole almond cream cheese but coconut milk would have been nice!

1/2 container vegan cream cheese (I used kite hill), 1/2 cup almond milk, 1 ts tandoori spice blend + 3 oz pasta

  1. Blend almond milk and cream cheese smooth or whisk in a pot
  2. Simmer with spices
  3. Mix with cooked pasta. ENJOY
