I completely forgot to take a picture of the smoothie. If you don’t watch the video then just use your imagination. Today might have been the first time I’ve used frozen spinach. I swear it’s a game changer. I love it. From this point forth it’s going in everything.
240 grams banana (about 2), 1 cup unsweetened almond milk, 1 TB agave (20 grams), 1 TB cocoa powder (5 grams), 1 scoop vegan protein powder (23 grams), 85 grams frozen spinach, extra water for blending
Blend it all together. It makes a quart! ENJOY
Lunch: Broccoli & Rice with Kung Pao Sauce
1 bag frozen broccoli (340 grams), 1/4 cup short grain brown rice (45 grams), 1/2 cup water, kung pao sauce (homemade recipe or store bought), 1/2 TB flax seed oil, 1/2 TB soy sauce, sesame seeds for garnish
Cook rice, cook broccoli (I used the Foreman Grill!!), mix cooked broccoli in kung pao sauce, top cooked rice with flax seed oil & soy sauce, garnish with sesame seeds. ENJOY
Dinner: Red Lentils + Indian Spices + Avocado
1/2 cup red lentils, 1.5 cups water, 1/2 TB coconut oil, salt & pepper, spices (coriander, turmeric, chipotle powder), 1/2 avocado, chopped tomatoes, 85 grams frozen chopped spinach
Cook lentils, 5 minutes before lentils finish add in the frozen spinach. Add oil, spice and salt. Mix well then plate food. Top with sliced avocado, tomato, salt & pepper. ENJOY
I finished the night off with hot mushroom tea. It smelled like shit but tasted great. It had stevia in the powdered mix so that helped. Lone Wolf Book Club mug (our Etsy Shop).
Most days I either start off with a smoothie or end with banana ice cream. Today was odd because I usually need to end the day with something sweet. Today’s calories are low because I pretty much didn’t leave my couch besides eating & I’m in a calorie deficit. It was wet & cold out. But I did get a solid amount of protein.
