My thrift store George Foreman grill completely changed my life. When I realized I could cook sweet potatoes in 10 minutes I knew I could start buying more fresh produce again. For 15 years I was obsessed with healthy eating. Every year I got stricter until my brain cracked in half and I become allergic to healthy eating. Then I figured out I could use foil on the grill and never have to clean a dish again. What does it all mean? I can cook fresh or frozen produce with no clean up in the same amount of time it takes to cook a bowl of pasta or open a box of cookies. Game changer. I can eat unlimited amounts of veggies without having to invest all the mental energy. It’s so fast!

Using foil is the best thing ever but there’s more room to accidentally stem your food instead of grill it. Soggy grilled veggies are less than ideal but still better than boiled veggies. I avoid grilling things that get soggy (mushrooms & spinach) with things that grill perfectly (everything thing else). 99% of things cook in 8-10 minutes. Spinach & mushrooms cook in 2 minutes. Sweet potatoes cook in 10-15 minutes. White potatoes cook in 20 minutes. Salted veggies can draw out the moisture in the veggies causing them to get soggy. I usually grill my veggies dry, no oil or salt. Then I’ll season it once it’s done cooking. Sometimes I season some veggies with a salted blend and just make sure I don’t overcook it. I’ll spray sweet potatoes, white potatoes & onions with spray oil but I’m sure that’s optional. I cook fresh and frozen veggies pretty much the same. My Foreman can cook a whole bag of frozen veggies at once. I LOVE IT <— hippie!

Vegan Italian Stew -Vegetable George Foreman Grill Recipe

1 large yellow squash, handful of baby carrots, handful sliced mushrooms, large bowl of spinach (fresh or frozen), pasta sauce, Italian herbs & spices, olives, oil is optional

  1. Pour 2 servings of pasta sauce in a bowl. Mix in chopped olives, Italian herbs & spices. Oil is optional
  2. Chop squash & carrots and grill for 8-10 minutes. Once cooked mix the veggies into the pasta sauce bowl.
  3. Grill mushrooms for 1-2 minutes. Once cooked mix into the veggie bowl.
  4. Grill fresh or frozen spinach 1-2 minutes. When grilling fresh spinach pile high instead of spreading out on grill to avoid spinach from drying out. Mix in with veggies. You’re done

Vegan Indian Cauliflower Rice – Paleo George Foreman Grill Recipe

1 bag of cauliflower rice (1 lb), 2-3 TB vegan butter, 1/2 bag frozen mixed veggies,  1/3 onion, 1 ts turmeric, 1 ts coriander, 1/2 ts cumin, sprinkle of red pepper flakes, salt, garnish with cilantro

  1. Melt 1 TB vegan butter on grill and place onions on top. Sprinkle with salt and grill for about 10 minutes.
  2. Mix cauliflower rice , 2 TB melted vegan butter, 1/2 bag frozen mixed veggies, 1 ts turmeric, 1 ts coriander, 1/2 ts cumin, sprinkle of red pepper flakes. Salt to taste. Once onions are done mix them into this.
  3. Pour on the grill and cook for 8-10 minutes. Garnish with chopped cilantro. ENJOY

Vegan Lo Mein – George Foreman Grill Recipe

8 baby carrots, 3rd of small cabbage, a sprinkle of sliced mushrooms, 2 TB soy sauce, 1 TB agave, 1 TB cornstarch, sprinkle of garlic & onion powder, fresh or powdered ginger, 5 oz uncooked pasta, 1 TB sesame seed oil (sesame seed & green onion for garnish)

  1. Chop carrots and cabbage. Throw in sliced mushroom and grated ginger.
  2. Pour on top 2 TB soy sauce, 1 TB agave & 1 TB cornstarch. Sprinkle in garlic and onion powder and mix everything up. (optional: add 1 TB water)
  3. Pull veggie mixture on grill for 8-10 minutes
  4. Cook pasta while veggies are grilling. Once pasta is cooked drain & coat with 1 TB toasted sesame seed oil.
  5. Toss veggies with cooked pasta. Garnish with green onion & sesame seed. ENJOY

  1. I’ve owned GF grills in the past, but only relatively small ones and I only really used them for veggie burgers and grilled cheese sandwiches — you’re taking it to a whole other level!! I’m surprised you haven’t got several, seems like having more than one would be a great time saver since you make really big batches of veggies.

    Inspired by you, I ran out an got an 80″ one! Ordinarily, I’d never have gotten one so big — supposedly, it’s big enough to feed five people — but apparently GF is talking about toddlers or people who hate veggies when it comes to serving sizes, ha ha.

    Anyway, you might not get so much steaming if you use parchment paper instead of foil. Personally, I don’t use either. I only use soap to clean the grill the first time I use it and just damp paper towels every time after that. If I wipe it down right away, it’s easy to clean. If I don’t have time until after the meal, I just put damp paper towels in the grill and shut the lid so that the steam loosens anything sticking to the grill. Frankly, I’m making clean-up sound complicated but it actually only takes seconds. (Not that my method is kinder to the earth, since I’m using paper towels. A true environmentalist would use dishcloths to clean the grill, but that seems like too much work to me!)

    I add half a can of black beans and eat this like a meal, instead of a side dish. I either eat it with tortilla chips or use it as sandwich filling. Yum.

      I’m always keeping my eye out at thrift stores for all the different sizes. I’ve only seem one that was significantly larger than the one I have at a thrift store. I really had to ask myself if I should buy it. I have zero free counter space for a larger one or a second one but would LOVE to have either of those options.

      I totally know what you’re talking about with steaming a wet paper towel to clean the grill. I’ve seen videos of people doing that.

  2. Well, my 80″ GF is actually only slightly bigger than a large dinner plate — 80 square inches sounds HUGE, but not so much. I love it, but it didn’t come with one of those special spatulas that has grooves that match the grill. (I’m tempted to find a GF on Craigslist that comes with two spatulas, keep one spatula, and sell the GF for what I bought it for. But that seems like waaaaaaay more trouble than it’s worth! Besides, I’ve been using silicone tongs instead and they work great.)

    I have a small kitchen with only about four feet of counter space, so I can relate. There are SO MANY gadgets I want and there are so many deals to be had on Craigslist, it’s CRAZY. (The local thrift stores aren’t that great; I find the selection and pricing better on Craigslist.) Even new stuff is often super cheap sometimes, like this 2.5-quart slow cooker I got for only $5 — plus it’s cute, which is an added bonus 🙂

    The lack of space keeps me (somewhat) in check. Which is a good thing, I guess. Ha. Maybe.

    I had the nacho dish for dinner tonight and it was so good! And ridiculously healthy, though not LCHF. It makes four servings, so I’ve got leftovers. Yum, yum, yum.

    By the way, your recent vids on vegan junk food and appys KILL me. OMG, all those delicious carbs. WANT.

    1. Me too as far the gadget thing goes. I wouldn’t think I’m a gadget person but as I get older my personality is changing. I want an air fryer. I wish I had a toaster…. Some times I want an ice cream maker even though banana ice cream is always bringing it at 100%. I want an electric tea pot. (I just bought my first electric blanket). Seriously, I’m discovering a new side to myself. 😉

      80″ sounds huge but when you compare it to a large plate that doesn’t sound large at all.

      My grill didn’t come with a drip tray or spatula. These are things I would love to just magically show up at my door. No effort intended.

      The junk food video was pure awesomeness. I still have left overs of slices of strawberry coconut ice cream and unfrosted pop tarts. Everyday I wonder if I should make myself another one.

    2. Remind me what the parameters to your diet are? How many carbs, fat, protein and calories is your ideal day. I’d be cool if I could do a “what I eat in a day” video to that.

        So, the whole premise of LCHF is to keep insulin / blood sugar levels stable and within normal range. For people like me — individuals who are insulin-resistant or diabetic — carbs and protein cause insulin levels to spike, but fat and fibre do not.

        Ideally, I’d like to consume no more than 20 grams of net carbs a day. Net carbs are carbs minus fibre. For example, 50g of avocado has 4g carbs and 3g fibre so it’s only 1g net carbs. On a not-so-perfect day, I shoot for between 20g to 50g net carbs.

        For protein, I use the following guidelines:

        For me that means no more than 42g protein. On a not-so-perfect day, I try to limit protein to 56g.

        As for fibre, I try to get at least 25g a day but more is fine. Unlike carbs and protein, this is not something I need to limit and it’s even challenging making it to 25g since getting too much fibre is almost impossible since fibre-rich foods are so filling.

        The rest of my calories come from fat — I pour the contents of the GF grill drip tray over my meal after I put it on the plate 🙂

        As for calories, this is where it gets really weird. When I’m not doing LCHF, I maintain my weight on less than 1500 calories a day. On LCHF, I can eat anywhere from 1700 to 2300 calories and still lose weight. It’s voodoo.

      2. Okay, so I’m going to put this in my mind and see what I can come up with. I may do this wrong or at least worry that I’ll be doing this wrong. I’ll do my best, let’s say it that way 🙂

        If you can eat up to 50% MORE food with LCHF than rock on with your bad self!! Granted its a limited menu but still 🙂

        I remember you said it completely reversed or minimized some real health issues you were having. Totally amazing!


  3. Using MyFitnessPal is a godsend in terms of calculating and tracking — in fact, there’s no way I could do this without that tool!

    Don’t worry about not doing it wrong, it’s a big learning curve. Mostly I’d love to see what you come up with. Like you said, it’s a bit limiting and totally different from my old diet, which was the total opposite (high carb, low fat)!

    Whatever you come up with will be great, I’m sure. Even if it needs tweaking, it’ll give me some ideas and inspiration — in other words, don’t worry — be happy 🙂

    1. I’ve got a game plan. I have a handful of ideas for recipes so I might just make a compilation video instead of a “what I eat in a day” video since I have more recipe ideas than what a person would eat in a single day.

      Heads up, it may take a few weeks to pull it all together. I’m pumped!

      Looking at low carb recipes brought me back to “back in the day”. Mark and I did low carb for about 3-4 years after we first got married. Nostalgia is seriously the weirdest thing for me.

        PS I’m guessing you and Mark probably didn’t limit protein when you did low carb. At least that was the case for me when I tried low carb in the past — in fact, I ate way more protein than usual! — which is why it didn’t work for me then. That’s the key with the LCHF — low carbs AND low protein.

    Yesterday I picked up a free, small Foreman grill and then started searching Youtube. I had watched a few then came across your 10 Veggie Hack, then your video blog. Couldn’t stop watching them. Your presentation has a cool delivery. Your presentation/plating makes the food look so mouthwatering!

    I am vegetarian but have been cheating with fish, some chicken and some Swiss cheese slices. Will be going full vegan now that I have seen some of your videos (now at #40 in your blog).

    Going to do my first veggie grilling tonight, yams and carrots! Can taste them now! Mmmmm!

  7. I’m addicted to your videos:) I love how easy they are and that you use loads of spices. Props to you guys for taking control of your finances and crunching numbers.

    I threw a concoction together and thought of you. It was good but I’ll let you play with it and make a legit recipe if it sounds appealing. Mix in a bowl low sodium soy sauce, garlic powder, onion powder, rice vinegar and stir-fry sauce. Coat/soak tofu. Drain excess liquid and put on a baking sheet.

    In another bowl mix 1 part olive oil to 2 parts honey with cumin and turmeric. Coat veggies. Put it in the same baking sheet, mixing the tofu gently with the veggies and bake in the same sheet.

    The cumin and turmeric with honey elevate the Asian fare. The sweetness from the honey and the salt from the soy sauce is delicious:)

      Sadly soy/tofu (and peanut butter) does interesting things to my bowl movements. TMI, I know. I do indulge now and again.
