Hell yeah! If you’re going to make this without fat then I’d recommend filling your bowl with a 1:1 ratio of potatoes to gravy. More gravy than mashed potato would work too. You could make the mashed potatoes less dry by mixing in water, vegan milk or some sort of fat. I think dry mashed potatoes with lots of cauliflower gravy is perfect. This gravy could be eaten as a soup.
Potatoes, cauliflower, garlic & onion powder, herb de provence type of blend and water
- Chop & boil both 1/2 a cauliflower and 2 lbs of potatoes in two separate pots
- Mashed potatoes with salt, pepper & garlic powder. You could use some or none of the boiled water in the mashing processes. I mashed my dry.
- Blend cauliflower in a blender with just enough boiled water to get everything moving without watering it down. Add garlic & onion powder, herb de provence and salt to taste.
- Pour gravy over mashed potatoes. ENJOY
