This is a great recipe for anyone who is looking for creative ways to up your potassium without having to drink a massive (but delicious) green smoothie when you really want something warm to eat. We ate this as a main dish but I’d recommend making this as a side dish or adding something more substantial to it. This is low fat, low carb & low protein so adding one of those into the mix would balance out the meal. This filled my stomach while feeling unsubstantial which was kind of a gyp because it tasted so good. Pineapple & cashews in this would rock my world.
Medium size cauliflower, 2-4 TB soy sauce, frozen mixed veggies, garlic, onion, ginger (fresh or powder) & 1 TB toasted sesame seed oil
- Cut cauliflower into chunks while discarding the hard inner stem. In batches pulse the cauliflower into rice size pieces in a food processor with S blade.
- Chop onion & garlic and grate small amounts of fresh ginger. Then saute in 1 TB oil for a few minutes.
- Add in the cauliflower rice, throw in soy sauce to taste and half a bag of frozen mixed veggies. Saute for 5 minutes or so. ENJOY
