It’s been a surreal week. Thankfully, there are simple recipes that take 2 seconds to puzzle piece together while letting the oven take care of the rest. Let’s eat more 2 ingredient dishes and have bacon be half of the equation, like this bacon wrapped tater tot recipe. I’d bet this could be made with vegan soy bacon, I may try that soon. This week I plan to make some mushroom “bacon”. Until then…

  1. Chop off the ends of the brussels sprouts and remove any wild looking leaves.
  2. Cut bacon slices in half. I cut them while still in the package so that it cuts perfectly.
  3. Wrap bacon around the veggies. Place seam side down and bake at 450 degrees for 30 minutes (or till desired crispy-ness). ENJOY!
