Here’s a cheap hardy dinner that I wish would magically appear right in front of me as I type this. Pork tenderloin is like steak to me. I love it and am so glad it’s cheap! We love to roll it and spices and bake it. it couldn’t get any easier. Pork and mashed potatoes… only with some gravy could this get any better. I never make gravy so this recipe is a good starting place for simple, gluten free gravy.


  1. Roll pork in chili powder, cumin, crushed fennel, basil & salt
  2. Bake at 450 degrees for 20 minutes (or so)
  3. Take out of oven and let it sit for 5-10 minutes before cutting


  1. Chop and boil
  2. Drain and mash with either olive oil or butter & salt + pepper


  1. Heat on the stove 1 cup water
  2. 2 TB arrow root in a small amount of cool water in a bowl and mix
  3. Add 1 TB oil or butter to the water on the stove (more fat makes it taste better)
  4. When stove water starts to boil add arrow root water to it and whisk
  5. Add spices (poultry herbs, rosemary, etc) & salt
  6. The lack of color is less appealing so I added turmeric to dazzle it
  7. Taste, tweak, serve
