I am in love with an any variation on rice and bean which are the wolds cheapest foods. If I could have 50 different ways to eat a rice & bean combo meal then I would truly be a Rich Bitch. I’m new to Cajun, it’s not my go to so I’m glad I got off my ass and made this. This could easily be made vegan and/or dairy free. One skillet dinner, yo.
- Take 2 TB of oil (butter, olive oil, etc) and melt in skillet
- Saute onions and celery in oil & add salt (bell pepper would be nice too)
- Add sausage to cook with veggies (optional)
- Once everything is cooked in skillet add 1.5 cup water, .5 cup white rice, can of beans & 1/4 cup salsa
- Throw in spices (chili powder, cumin, garlic, poultry spices) & jalapeno
- Stir everything around & let simmer with the lid on
- Check after 15 minutes or so. Once rice is done & water is absorbed you’re done. (add more water if rice isn’t done)
