This recipe is awesome! Throw handful of cheap ingredients into a skillet and 20 minutes later food is being served. I love quinoa, I was just thinking the other day that I need to buy some more. I’m on a hardcore rice kick so having some fluffy, nutty quinoa in my rotation is legit. This has 1 TB of oil in it but would be less or zero if needed. I bet this is slow carb worthy if you’re into Tim Ferriss or The 4 Hour Body.

  1. 1 cup quinoa in skillet with 2 cups water or broth
  2. Add 1 cup salsa & 1 can of beans
  3. Add 1 TB oil (optional)
  4. Put lid on when it starts to boil and lower heat
  5. Check it after 15 minutes
  6. Once everything is cooked & is liquid is fully absorbed turn stove off
  7. Add fresh spinach
  8. Put lid back on to steam/wilt spinach
  9. Once wilted mix everything up. ENJOY
