Dude this idea for nut free cheese dip was genius! I was wanting more creamy nut free vegan cheese options in my life. I love almond cream cheese but it’s so pricey and you get so little. Plus i think my body has a limit to the amount of nuts and seeds I can enjoy in short amount of time.

Vegan White Cheese Sauce
Dude this one completely blew me away! By far my favorite new vegan cheese sauce recipe. I thought nothing could be better than the potato/carrot based cheese but nope this one is even better.

#1 this one just requires opening a can of beans instead chopping & boiling veggies. Any recipe the has less dishes to dirty will win my heart every damn time!

#2 (just my opinion here) I think this recipe tastes better. I love the potato/carrot recipe but I need to add canned chipotle or hot sauce to take it to the max. This white cheese sauce was great without the extra add in of hot sauce. And I couldn’t even taste the beans.

#3 I love that this recipe makes a reasonable portion. Yes you can double or triple the recipe but I love that you don’t have to over due it just to make a batch. The fat free cheese dip below makes a massive vat. More about that below.

****It was pointed out that I used almond milk (a nut!) in the video. Almond milk isn’t required. Just liquid to blend it, water or nut free milk will do!

1 cup white beans (I used canned cannellini beans), 1/2 cup plain vegan milk (or less), 5 large TB nutritional yeast, 1/8th ts garlic, 1 lime juice, 2 TB melted vegan butter or oil, 1/2 ts salt (maybe less or no salt if you’re adding salted vegan butter), tiny pinch of xanthan gum (optional)

  1. Blend everything together. Start with less salt and add more to taste. You can use less almond milk to make cheese thicker. ENJOY

Vegan Chili Cheese Dip
Feel free to use any of the cheese bases in this post and just add vegan chili to them. This potato/carrot recipe has been a game changer for so many people. I’m so glad I found it on pinterest and have made many mac and cheese blog posts with it.

I usually don’t add nutritional yeast but you absolutely can! Since the focus of this post is cheese sauce I didn’t take the time to make homemade vegan chili but I have multiple epic vegan chili recipes.

Here’s a sneaky vegetable chili recipe I LOVE!
Here’s a fat free-low calorie vegan chili recipe

5oz chopped potatoes, 5oz chopped carrots, 1 lime juice, 1/4-1/2 cup water, dash of garlic & onion powder, 2-3 TB vegan butter or oil + canned or homemade vegan chili

  1. Boil veggies til soft (about 20 minutes) then drain veggies away. Reserve some water for blending.
  2. Blend everything til smooth (except chili). Start with less water and salt. Add salt to taste and add water slowly to get desired thickness.
  3. Heat chili and mix into cheese sauce. ENJOY

Smokey Oat Cheese Sauce (Fat Free)
I tried the potato recipe above fat free to save on the calories. As someone who regularly eats fat I wasn’t the biggest fan of it fat free. Only once I started making it with oil did I find it so much better. But this recipe which contains zero added oils or fat is really good!

The roasted peppers in this recipe gave me major flash backs to the greatest homemade gluten free crackers on the planet. Dude check out the cracker recipes. I’m sure they’d be epic with all these cheese dips πŸ™‚

Side note: in the video I used less water. As you know i can’t follow a recipe to save my life so I tried to make a smaller batch. Long story short that was the wrong thing to do. I added more water & salt than what’s shown in the video and blended the batch again. Lesson learned!

2 cups oatmeal (200g), 1/2 cup nutritional yeast, 4 TB corn starch, 2 ts onion powder, 2 ts salt, 1 jar roasted red pepper in water (12oz), 1 lime juice, 1/4 ts liquid smoke, 4 cups water

  1. Blend everything together super well. Blend longer than you think! Include the water from the roasted red pepper jar.
  2. Boil on stove so that the corn starch thickens and turns your batter into cheese! ENJOY

I just want to sit by a fire place and listen to sexy 80s smooth jazz while drinking a cozy warm smoothie. I can’t be the only one who needs to a smoothie option when the weather gets cold. Warm smoothies are unlike your standard smoothie. They’re on a completely different planet.

I will drink a regular smoothie every damn day of my life but then when the temperature drops I’m at a loss. I know a lot of people switch over to a hot bowl of oatmeal but I seriously just want to continue on with smoothies but I hate being cold! Enter in the warm smoothie.

I’m not going to lie. I haven’t gotten into the warm smoothie habit yet because it feels like I’m cheating or breaking some sort of rules???? I’m not sure, it’s just so outside of my box that I really need to do it everyday for a week to make it normal. Another reason the warm smoothies habit feels so “wrong” is that they taste even more like desserts than a regular smoothie (even though it’s 100% the same ingredients)! They are really that good!

Thickener: Chia seeds, flax meal or oatmeal (maybe even protein powder)
Flavor: any spices, cocoa, flavor extracts
Sweetener: any kind you want, syrup, powder, dates, etc
Extra: Nut butters, cacao nibs, coconut flakes, nuts or seeds
Liquid: use as little or as much as you’d like

Microwave Heating Tip: If you’re heating your drink in the microwave feel free to stop and whisk it for a few seconds 1 or 2 times through the microwaving processes. Since I made small smoothies (maybe 12oz each) for the video I microwaved them for 1 minute each and didn’t whisk during the heating process. They were warm but not hot. Feel free to microwave longer especially if your smoothie is huge! The longer you microwave the more you need to give it a quick stir to prevent any areas from over heating.

Stove Heating Tip: If you’re heating your smoothie on the stove stir the whole time. You can bring it to a low simmer but avoid bringing it to a boil.

My favorite smoothie thickener is oatmeal. It’s cheap and clearly a versatile ingredient to have on hand. I thought chia seeds were a little gritty but I might have just not blended my smoothie thoroughly. But chia seeds, flax meal and oatmeal are all great options to give your smoothie the fullness it needs!

Every time I’ve made myself chai I’ve used whole spices with a mortar and pestle. For the smoothie I used ground dried spices. Why does ground ginger smell so good?! Feel free to use whatever ratios of spices you’d like.

TIP: If your almond butter is too stiff then microwave a couple tablespoons for just a few seconds. Or mix a couple tablespoons of almond butter with a few drops of hot water.

PS: the almond butter I used in the video has sugar in it (*gasp*). I was too cheap to open the wallet for the good stuff πŸ™‚ I trust you’ll buy approved almond butter and not be like me.

Almond Coconut Bites
So freaking good! I’ve already make a second batch. Feel free to use any spices.

1/2 cups almonds (84g), 1/4 cup coconut flakes (16g), 1 cup dates (pits removed, 140g), dash of cinnamon & nutmeg

  1. Process almonds with coconut flakes & spices in a food processor until everything is broken down into small pieces.
  2. Add dates and processes well. Pinch mixture together with your fingers. If it holds shape then move to the next step. If too dry and not sticky then add more dates and keep processing.
  3. Scoop and roll mixture into bite size balls. ENJOY

2 sliced frozen bananas (328g), 1 TB cocoa powder, dash of cold water + toppings (cashews, cacao nibs, coconut flakes, spoon of almond butter)

  1. Blend frozen sliced bananas with cocoa powder and a dash of cold water
  2. Once smooth pour into a bowl and add whatever toppings you’d like. ENJOY

It’s like cereal because it’s cold almond milk with crunchy bits (apples!) and spices (cinnamon).

2 apples (chopped), fresh almond milk (homemade recipe here), cinnamon, hemp seeds

  1. Chop apples and place in bowl
  2. Add homemade almond milk
  3. Top with cinnamon and hemp seeds. Bananas would be a good topping too! ENJOY

Chia Oatmeal Cookies
I couldn’t stop eating these. They’re a good mix of hippie and pastry. Not too refined and not too earthy. I’m into it. Plus I always need a more luxurious way to eat oats. Cookies are the way πŸ™‚

Makes about 16 cookies using a scoop

1.5 TB chia seeds (18g), 1/4 cup almond milk, 2 bananas, 3/4 cup oatmeal (80g), cinnamon, 1/4 cup coconut flakes (18g), 1 oz raisins (little box), 1/4 cup chocolate chips (50g, I used mini enjoy life), 1 TB almond butter

  1. Mix chia seeds with almond milk. Set aside for 10 minutes to gel up.
  2. Mash bananas then mix everything together
  3. Scoop and flatten cookie batter on a baking sheet
  4. Bake 350 degrees for 15-17 minutes then allow to cool. ENJOY

Chia Snickers Pudding
After I made this recipe I then bought a handful of little glass jars. While you could eat this as a 16oz serving (as shown in the picture) splitting this into 2 or 3 little jars would be better. I’m always surprised by how filling chia pudding is. By the way, the 2 ingredient caramel sauce is amazzzzzzing.

Pudding: 6 TB chia seeds (70g), 3 TB cocoa powder (15g), 1.5 cup unsweetened vanilla almond milk, 3 TB maple syrup (or agave, 66g), salt

Caramel Topping: 2 TB almond butter, 2 TB agave or maple syrup + garnish with nuts & chocolate chunks

  1. Mix pudding ingredients together. Chill in fridge for a minimum of 3 hours or overnight. Mix a couple times while it sits and gels up.
  2. Mix caramel ingredients together. Microwave if needed to mix smoothly. It will thicken again once cooled. Top with nuts & chocolate chunks. ENJOY

So good! They were a bit crumbly straight from the freezer but were perfect after sitting in the fridge overnight. I’m going to be real with you. These are pretty much no-bake cookies in granola form with added chia seeded. Dude this is my crack! I know nothing that tastes better than this!

Makes 6

1.5 cup dry oatmeal (1650g), 1/4 cup coconut flakes (15g), 1/4 cup cocoa powder (15g), 1/4 cup chia seed (45g), 1/4 cup almond butter (65g), 1/4 cup coconut oil (60g), 1/4 cup agave (80g)

  1. Mix dry ingredients together
  2. Soften wet & oily ingredients
  3. Mix wet and dry together
  4. Pack mixture into a pan and chill in freezer til solid then cut into pieces. ENJOY

Crispy Red Lentil Nuggets
I love red lentils. I even made a whole Vegan Red Lentil recipe post of different things you can make with red lentils that isn’t soup (image pizza!).

1 cup red lentils (200g), 1/2 cup flour (50g, I used besan bean flour, any works), about one cup of each: 1 grated onion, 1 grated carrot, grated potato + spices, oil for cooking and frying

  1. Soak 1 cup lentils for 20-25 minutes
  2. Cook grated and diced veggies in 1 TB oil with salt. Cook in skillet for about 15 minutes. It did stick in the skillet a bit while cooking.
  3. Blend spices, flour and soaked lentils in food processor. Pulse to break everything up but leave some texture.
  4. Mash cooked veggies with the chunky dough
  5. Coat hands with oil and form nugget shapes from the mixture. Fry in oil. Or bake at 375 for 30-40 or until golden. Flip while cooking to make both sides crispy. ENJOY

Crispy Lazy Protein Chickpea Nuggets
You could mix shredded veggies into this but this recipe is for lazy people who just need to start dipping nuggets into something delicious. If you have a bag of chickpea flour and have no idea what to do with it then this is the recipe for you!

4 cup chickpea flour (400g), 1 cup water, salt + spices (I used paprika, Italian seasoning, seasoning salt, dried chives) + oil

  1. Mix dry ingredients together then add water. This batter will be thick so use a wooden spoon instead of a whisk.
  2. To bake coat the baking sheet with oil
  3. Scoop batter onto oiled baking sheet. Dip fingers in oil and flatten nuggets.
  4. Cook in 375 degree oven for 30. Flip halfway through (I oiled the film side at this point). Done once golden on each side. ENJOY

These could be made with an Asian or Indian flare! But any flavor would work. I like to pick my flavors based on what dipping sauces I want. I don’t say it enough but I freaking love cooked cabbage. I always forget that because cabbage isn’t glamours but is so good. These were my absolute favorite of the three nuggets.

1/2 med cabbage (250g), 1 cup flour (120g, I used besan bean flour, any works), spices, salt, water, oil

  1. Shred cabbage and mix with spices and flour (I used half the flour at first)
  2. I set my mixture in the fridge to let the salt inside the mixture breakdown the cabbage. Then I added a more flour. I used a total of 1 cup. You can possibly skip this step of letting it sit in the fridge.
  3. Fry in oil. Or bake at 375 for 30-40 or until golden. Flip while cooking to make both sides crispy. ENJOY
